The salmon is marinated with garlic, ginger, sesame oil, soy sauce and sake and grilled with a little butter. It is served with spicy mango sauce made with fresh mango, Sriracha and fish sauce, shari rice steamed with star anise and a fresh salad of cucumber, edamame, red cabbage and carrot topped with the crisp salmon skin.
