Caldo de piedra

Try this heritage dish from the state of Oaxaca, caldo de piedra is a seafood soup that dates from the pre-Hispanic period. It is literally cooked on a hot stone over a wood-burning fire in fishing communities and fishermen would prepare it on the banks of rivers with the catch of the day. At Hacienda Sisal it is prepared tableside in a volcanic stone molcajete or mortar.
