Enjoy sparkling, white, rosé and red wines paired with five delectable courses. The refreshing acidity of a Dubois sparkling wine goes well with a melted cheese and mushroom starter; a Casa Madero Chardonnay is served with a smoked marlin tostada and salad and the richness of pork in a cochinita pibil sope is balanced with a L.A. Cetto rosé. After a refreshing Yucatecan lima sorbet to cleanse the palate, a full-bodied, award-winning Casa Madero Shiraz is served with carnitas and followed by beef fillet in salsa borracha with a Santo Tomas Cabernet Sauvignon. Dessert is a heavenly chocolate crème brûlée set off to perfection by Xtabentun, the Yucatan’s honey-anise liqueur.

The vineyards participating in the Hacienda Sisal Mexican Wine Dinner are among of the country’s oldest and most famous, the winners of many awards. Santo Tomas and L.A. Cetto are two of Baja California’s most famous wineries, both located in the Valla de Guadalupe near Ensenada. Located in the Valle de Parras in Coahuila and founded in 1597, Casa Madero is Mexico’s oldest vineyard – and the oldest in the Americas. The Dubois by NV Freixenet sparkling wine is produced in the central state of Queretaro.
