If you are staying at Royal Resorts now, why not plan an evening of lagoonside dining at Captain’s Cove or enjoy showstopper dishes and guitar serenades at El Conquistador? These two restaurants will be open until July 14 so there is time to collect more happy memories.
Sunsets and seafood at Captain’s Cove
A trail of molten gold ripples across the lagoon as the sun goes down and you take your seat on the deck at Captain’s Cove for nature’s show. Choose a cocktail from the mixology menu and watch a blaze of rose, orange, violet turning to the deepest blue. Herons wing their way to roost, fish jump and a solitary crocodile on the hunt lurks in the shallows. When the stars come out and the candles are lit, you’ll be ready for dinner and some of the finest and freshest seafood in town.
Locally sourced fish, Caribbean lobster, Pacific shrimp, clams, scallops, mussels, tuna and salmon are cooked to traditional Mexican and Mediterranean recipes or with the chef’s inspiration and a hint of the Far East. From coconut-crusted shrimp and carpaccio to grilled lobster, frutti di mare pasta and a whole fish cooked in salt flavored with grated lemon and orange rind, there is plenty to choose from. Open daily from 5 p.m. to 11 p.m.
Continental flair and live music at El Conquistador
Sublime flavors, sterling service and the serenades performed by master guitarist Jorge Durán, each moment at El Conquistador is special. Savor prime steaks, Caribbean seafood, classic continental favorites and showstopper chef’s creations. Enjoy a fine dining experience and be sure to order dessert and one of the flaming coffees that are a specialty. Open Sunday to Friday, 5:30 to 11 p.m.
The El Conquistador 37 Years Dinner is still being offered on Fridays with a special seven-course menu and music. Two sittings at 6 p.m. or 8 p.m.
